Special online lecture by one of the dedicated tane-koji makers, Akita Konno, coordinated by Marika Groen.

Tane-koji, is a collection of spores of koji fungus. We have around seven dedicated producers in Japan, and each one of them has special expertise in maintaining the quality and blending specific strains to meet the expectations from the pro-breweries.
I'm hosting a special lecture focusing on the features of shoyu koji fungus and their enzyme potency with them. See the table in the photo. We will talk based on this. The lecture will be in English.


The lecture from Akita Konno starts from 8:30AM JST, but Marika will be logging in 30 mins in advance to give you a short crash lecture on tane-koji in general. If you are new to tane-koji, be sure to join 30 mins earlier and ask any general question to Marika, so we can dive into the depth of shoyu brewing directly after Akita Konno joins us.
